Adipic acid (CAS 124-04-9, E355, FEMA 2011) is a six-carbon dicarboxylic acid produced industrially from cyclohexane oxidation. Also known as adipinic acid, it is a recognised food additive under EC regulation and carries the E-number E355 in European markets.
In food and beverage production, adipic acid functions as an acidulant and pH buffer, providing a smooth, non-hygroscopic tartness in powdered drink mixes and baking agents. In polymer manufacturing, it serves as a key monomer in nylon-6,6 synthesis and as a plasticiser precursor, reacting with diols to form polyester chains with defined flexibility.
