Calcium Sorbate (CAS 7492-55-9), also known as CaSA or E 203, is the calcium salt of sorbic acid. It functions as a preservative and antioxidant across food, cosmetic, and pharmaceutical applications, offering comparable antimicrobial activity to potassium sorbate with a lower solubility profile.

In food and beverage manufacturing, E 203 inhibits mold and yeast growth by disrupting microbial enzyme activity, making it effective in baked goods, dairy products, and beverages. In personal care formulations, it extends shelf life of emulsions and creams by suppressing fungal contamination at low use concentrations.
