Description
Calcium stearoyl lactylate, also known as E482, CSL, or calcium stearoyl lactate, is the calcium salt of stearoyl lactic acid. It is a food-grade surfactant registered under EC 227-335-7 (CAS 5793-94-2) and commercially available under names such as Verv-Ca.
In baked goods, E482 strengthens gluten networks by interacting with wheat proteins, improving dough tolerance and loaf volume. In personal care formulations, it stabilises oil-in-water emulsions by reducing interfacial tension between phases. It also functions as a rheology modifier in processed foods, controlling texture and crumb softness over shelf life.
Calcium stearoyl lactylate is supplied in compliance with EU food additive regulation (E482) and FCC specifications. It is subject to REACH registration for industrial applications. Procurement quantities are typically available in powder or flake form, supplied in bags or fibre drums depending on volume requirements.
