Calcium tartrate (CAS 3164-34-9) is the calcium salt of tartaric acid, also known as Calciumtartrat, Calcium L-tartrate, and Calcium d-tartrate. It carries no assigned E-number and is distinct from free tartaric acid, offering reduced solubility and a milder acidic profile suited to controlled-release applications.
In food and pharmaceutical formulations, calcium tartrate functions as a pH buffer and mild acidulant, stabilising product acidity without the sharp drop associated with stronger organic acids.
