Capsanthin (CAS 465-42-9, E 160c) is a natural red-orange carotenoid pigment extracted from Capsicum annuum, commonly known as paprika. It is commercially available under trade names including Color-Up and Chili Red, and is also referred to as capsanthine or Paprika Red in formulation and procurement contexts.

In food manufacturing, capsanthin delivers stable red-to-orange coloration in processed meats, sauces, and snack seasonings, where its carotenoid structure provides concurrent antioxidant activity by quenching free radicals.
