Description

Cinnamaldehyde (CAS 104-55-2, EC 203-213-9, C9H8O) is a naturally occurring aromatic aldehyde found in cinnamon bark oil, also known commercially as Cinnamal, Styrone, Phenylacrolein, and FEMA 2286. It carries no E-code designation in the EU but is approved as a flavoring substance under EU Regulation 1334/2008.

In food and beverage formulations, cinnamaldehyde delivers characteristic cinnamon flavor by binding to taste receptors at low use concentrations, typically 10–200 ppm depending on application. In personal care products, it functions as a fragrance component and exhibits antimicrobial activity, making it relevant in oral care formulations such as toothpastes and mouthwashes.

Cinnamaldehyde is available in food-grade and fragrance-grade specifications, with quality benchmarked against FCC and IFRA guidelines. It is subject to REACH registration and classified as a skin sensitizer under CLP.
