Description
Citric acid (CAS 77-92-9, E330, H3Cit) is a naturally occurring organic acid produced commercially via fermentation of carbohydrate substrates. It is also known under trade references such as Citro and Chemfill, and carries EC number 201-069-1 with the molecular formula C6H8O7.
In food and beverage manufacturing, citric acid functions as an acidulant and flavour modifier by lowering pH and activating taste receptors, while in water treatment it sequesters calcium and magnesium ions through chelation, preventing scale formation. In personal care formulations it adjusts product pH to stabilise active ingredients and condition skin surface chemistry.
Citric acid is available in food-grade (E330, FCC), pharmaceutical-grade (Ph.Eur.), and technical-grade specifications, supplied as anhydrous or monohydrate crystalline powder.
