Description

Cysteine (CAS 52-90-4) is a sulphur-containing amino acid supplied as a white crystalline powder, commonly identified by the abbreviations CYS and CYSH, the systematic shorthand H-Cys-OH, and the food additive designation E920. It occurs naturally in proteins and is produced commercially via fermentation or extraction.

In baked goods, cysteine functions as a dough conditioner by cleaving disulphide bonds in gluten networks, reducing mixing time and improving extensibility. In personal care formulations, its free thiol group acts as a reducing agent in hair-waving systems and contributes antioxidant and humectant activity in skin-conditioning products.

Cysteine is available in food-grade (E920, FCC), pharmaceutical-grade (Ph.Eur.), and cosmetic-grade specifications. It is REACH-registered under HS code 29309012 and supplied in standard 25 kg bags or fibre drums. Buyers should confirm grade suitability against application-specific regulatory requirements prior to procurement.
