D-Isoascorbic acid (CAS 89-65-6), also known as erythorbic acid and sold under trade names including Erycorbin and Mercate 5, is a stereoisomer of ascorbic acid with significantly lower vitamin C activity. It is classified as an organic acid with the molecular formula C6H8O6 and does not carry an E-number designation in the EU.

In food processing, it functions as an oxygen scavenger, retarding oxidative rancidity and colour degradation in cured meats, beverages, and frozen fish by donating electrons to free radicals before they attack lipids or pigments. In personal care formulations, it acts as a skin conditioner and antioxidant, helping to stabilise emulsions and protect active ingredients from oxidative breakdown.
