Dipotassium hydrogen phosphate (K2HPO4, CAS 7758-11-4) is an inorganic potassium salt commonly referred to as dipotassium phosphate or potassium biphosphate. It carries no E-number designation and is registered under EC 231-834-5. It is distinct from monopotassium phosphate and tripotassium phosphate in its degree of neutralisation and resulting pH behaviour.

In food and beverage manufacturing, K2HPO4 acts as a buffering agent by accepting or donating protons to maintain target pH ranges, and as a chelator it binds divalent metal ions that would otherwise catalyse oxidative degradation. In water treatment, it serves as a corrosion inhibitor by forming protective phosphate films on pipe surfaces.

Dipotassium hydrogen phosphate is available in food-grade and pharmaceutical-grade specifications, with compliance to FCC and Ph.Eur. monographs. The substance is registered under REACH. It is typically supplied as a white crystalline powder in 25 kg bags or bulk quantities, with documentation available on request.
