Description

Disodium 5'-guanylate, also known as GMP, 5'-GMP-NA2, E627, or FEMA 3668, is a sodium salt of guanosine monophosphate belonging to the nucleotide family. It is a naturally occurring compound found in foods such as dried fish and mushrooms, and is produced commercially through fermentation or enzymatic hydrolysis of RNA.

In food and beverage formulations, E627 functions as a flavour enhancer by synergising with glutamates to amplify umami taste perception at low use levels, typically combined with disodium inosinate as a 1:1 blend. In personal care applications, it acts as a skin conditioner and surface-active agent, modifying interfacial properties in emulsion systems.
