DL-Malic Acid (CAS 6915-15-7), also known as apple acid, H2mal, or E296, is a dicarboxylic organic acid produced synthetically as a racemic mixture of its two enantiomers. It is the DL form of malic acid, distinct from the naturally occurring L-isomer found in fruit.

In food and beverage formulations, E296 functions as an acidulant and pH buffer, delivering a smooth, lingering tartness that complements fruit flavours at concentrations typically between 0.1% and 0.5%. In personal care products, it acts as a skin conditioner and pH adjuster in leave-on and rinse-off systems, while its antimicrobial activity supports preservation in low-pH formulations.
