Description
Ethyl vanillin (CAS 121-32-4) is a synthetic aromatic aldehyde, also known commercially as Bourbonal, Ethavan, and Ethovan. It delivers a vanilla-like flavour and fragrance character approximately three to four times more intense than natural vanillin, making it a cost-effective alternative in flavour and fragrance formulations.
In food and beverage applications, ethyl vanillin functions as a flavorant by binding to olfactory receptors at low use concentrations, typically 10–100 ppm. In personal care formulations it contributes fragrance while also acting as an antioxidant, slowing oxidative degradation of lipid-based ingredients. Printing ink manufacturers use it as a UV stabiliser to reduce photodegradation of colorants.
Ethyl vanillin is supplied as a fine crystalline powder meeting FCC and food-grade specifications, with Ph.Eur.-compliant grades available for pharmaceutical applications.
