Description

Glyceryl monostearate (GMS) is a monoglyceride ester derived from glycerol and stearic acid, commercially available under trade names including Aldo 33 and Aldo 75, and also referred to as monostearin or 1-monostearin. It carries CAS number 123-94-4 and is registered under EC 204-664-4.

In food and pharmaceutical emulsions, GMS functions by orienting its hydrophilic glycerol head and lipophilic stearate tail at oil-water interfaces, stabilising droplet dispersion and preventing phase separation. In plastics processing, it acts as an internal lubricant and antistatic agent, reducing friction between polymer chains during extrusion and minimising surface charge buildup.
