Description

Heptanoic acid (CAS 111-14-8) is a seven-carbon saturated fatty acid, also known as enanthic acid, heptylic acid, and heptoic acid. It carries the FEMA designation 3348 and is not assigned an E-code for direct food use in the EU. It is commercially available as a neat liquid under these trade names across European markets.

In food and flavour applications, heptanoic acid contributes characteristic rancid and fruity top notes at controlled concentrations, functioning as a flavorant and acidulant.
