Isoamyl alcohol (CAS 123-51-3, EC 204-633-5, C5H12O), also known as isopentanol, isoamylol, and FEMA 2057, is a short-chain aliphatic alcohol produced primarily as a by-product of fermentation. In food and beverage formulation, isoamyl alcohol serves as a precursor to isoamyl acetate, the ester responsible for banana flavour notes, making it a functional flavorant in its own right.
