(-)-L-Malic Acid (CAS 97-67-6), also known as L-Apple Acid or L(-)-Malate, is the naturally occurring enantiomer of malic acid, a dicarboxylic hydroxy acid derived from fruit metabolism. It is registered under EC 202-601-5 and classified as an organic acid with the molecular formula C4H6O5.

In food and beverage formulations, L-Malic Acid lowers pH to inhibit microbial growth and delivers a smooth, lingering tartness that masks bitter off-notes in low-sugar products. In personal care, it functions as a pH buffer and skin conditioner by donating protons within the 3.5–5.5 range to maintain stratum corneum integrity.

L-Malic Acid is available in pharmaceutical and food grades meeting Ph.Eur., FCC, and REACH compliance requirements.
