Laevulinic acid

Laevulinic acid (CAS 123-76-2, EC 204-649-2), also known as levulinic acid, levulic acid, and commercially as levulinate or laevulinate, is a short-chain keto acid derived from the acid-catalysed dehydration of hexose sugars. It carries no assigned E-code and is classified under HS code 29183000.

In food and beverage formulations, laevulinic acid functions as a flavour modifier and acidulant, contributing a mild, slightly caramel-like tartness that complements fermented and baked product profiles. In personal care systems, it acts as a humectant by attracting and retaining moisture in the stratum corneum, and as a preservation booster by lowering the pH threshold at which phenoxyethanol and similar actives remain effective.
