Maltol (CAS 118-71-8) is a naturally occurring cyclic compound found in larch bark, pine needles, and roasted malt, also known commercially as Palatone, Vetol, and Larixic acid, and referenced under FEMA 2656. It carries no E-number designation in the EU but is approved as a flavoring substance under EU Regulation 1334/2008.
In food and beverage formulation, maltol functions as a flavor enhancer by intensifying sweet and caramel notes, allowing formulators to reduce sugar content without altering taste profiles.
