Monosodium glutamate (CAS 142-47-2), also known as E621, sodium glutamate, or FEMA 2756, is the sodium salt of glutamic acid, a naturally occurring amino acid. It is produced commercially through bacterial fermentation of carbohydrate sources and carries the EC number 205-538-1.

In food manufacturing, E621 functions as a flavour enhancer by activating umami taste receptors, reducing the need for sodium chloride in processed foods. In personal care formulations, it acts as a humectant and skin conditioner by binding moisture within the stratum corneum, and serves as a buffering agent to stabilise product pH in aqueous systems.

Monosodium glutamate is available in food-grade and cosmetic-grade powder forms, compliant with E621 specifications under EU food regulations, FCC standards, and REACH registration requirements.
