Description

Monosodium glutamate (MSG, sodium glutamate) is the sodium salt of glutamic acid, a naturally occurring amino acid. It carries no E-number designation in the EU regulatory framework despite its use as a flavour enhancer in food applications. It is also referenced under the names sodium acid l-glutamate and Monosodium DL-glutamate.

In processed foods and savoury formulations, MSG amplifies umami taste perception by binding to glutamate receptors on the tongue, reducing the need for added salt. It is used in soups, sauces, and seasoning blends to round out flavour profiles, and in meat processing to compensate for taste loss during thermal treatment.

MSG is available in food-grade quality meeting FCC specifications, supplied as a crystalline powder or needle-form crystals. It falls under REACH registration requirements for industrial supply within the EU. Standard packaging includes 25 kg bags, with bulk options available depending on volume requirements.
