Description
Polyglycerol polyricinoleate (PGPR, E476) is a food-grade emulsifier derived from glycerol and ricinoleic acid from castor oil. It is commercially available under trade names including PGPR 4125, Admul 1408K, and Quest PGPR, and is registered under CAS 29894-35-7.
In chocolate manufacturing, PGPR reduces the yield stress of molten chocolate by coating sugar particles and lowering interfacial tension, allowing manufacturers to reduce cocoa butter content without compromising flow. In personal care formulations, it stabilises water-in-oil emulsions and modifies rheology in anhydrous systems such as lipsticks and balms.
