Piperonal, also known as heliotropin or piperonaldehyde, is an aromatic aldehyde derived from the methylenedioxy group of the benzodioxole ring system. It occurs naturally in several plant species and is commercially produced through chemical synthesis. It is not assigned an E-code and carries no regulated food additive status in the EU.
In fragrance formulation, piperonal contributes a characteristic floral-cherry note and is used as a building block in heliotrope and oriental accords.
