Piperonal

Piperonal, also known as heliotropin or piperonaldehyde, is an aromatic aldehyde derived from the methylenedioxy group of the benzodioxole ring system. It occurs naturally in several plant species and is commercially produced through chemical synthesis. It is not assigned an E-code and carries no regulated food additive status in the EU.

In fragrance formulation, piperonal contributes a characteristic floral-cherry note and is used as a building block in heliotrope and oriental accords. In food flavoring, it functions as a taste modifier at low concentrations, imparting sweet, vanilla-adjacent character to confectionery and beverage applications. It also serves as an intermediate in the synthesis of certain printing ink components.

Piperonal is available in synthetic grade suitable for fragrance and flavor applications, with supply conforming to REACH registration requirements for the European market.
