Polyglyceryl-3 oleate (CAS 33940-98-6) is a polyglycerol ester derived from oleic acid and triglycerol, commercially available under trade names including Caprol 3GO, Drewpol 3-1O, and Mazol PG 031K. It carries no E-number designation and is classified as a nonionic surfactant with an HLB value suited to water-in-oil emulsion systems.

In food and personal care formulations, it functions as an emulsifier by reducing interfacial tension between oil and water phases, stabilising emulsions that would otherwise separate. In coatings and adhesive systems, it acts as a rheology modifier and dispersing agent, improving pigment wetting and controlling flow behaviour during application.
