Potassium bicarbonate (KHCO3, E501ii) is an inorganic potassium salt registered under CAS 298-14-6 and EC 206-059-0. It is also known as potassium acid carbonate or monopotassium carbonate and appears on ingredient declarations as E501ii across food, pharmaceutical, and cosmetic applications.

In food and beverage production, KHCO3 acts as a leavening agent and pH buffer, releasing CO2 when heated to create lift in baked goods without the sodium load of sodium bicarbonate. In agriculture, it functions as a contact fungicide, disrupting fungal cell membranes through osmotic imbalance, and is approved for use in organic crop protection programmes.

Potassium bicarbonate is available in food-grade (FCC), pharmaceutical-grade (Ph.Eur.), and technical grades. It complies with REACH regulations and carries E501ii status under EU food law.
