Potassium iodate (KIO3, CAS 7758-05-6) is an inorganic salt of iodic acid, also referred to as iodic acid potassium salt. It is a stable, water-soluble oxidising agent supplied as a white crystalline powder. No E-number is assigned for its direct use as a food additive in the EU.
In water treatment, KIO3 releases active iodine under acidic conditions, providing antimicrobial action against bacteria and protozoa. In flour milling and baking, it acts as a dough conditioner by oxidising gluten proteins to strengthen dough structure. It also serves as an iodine source in pharmaceutical tablet formulations for thyroid disorder prevention.
Potassium iodate is available in food-grade and pharmaceutical-grade specifications, with quality conforming to FCC and Ph.Eur. standards where applicable. The substance is registered under REACH (EC 231-831-9) and classified as an oxidising solid. Typical supply formats include 25 kg bags and fibre drums.
