Sarcosine (CAS 107-97-1) is a naturally occurring amino acid derivative also known as N-Methylglycine or methylglycine, abbreviated N-ME-GLY-OH. It is not assigned an E-code and carries EC number 203-538-6 with molecular formula C3H7NO2.

In personal care formulations, sarcosine functions as a skin and hair conditioner by binding moisture to the stratum corneum and improving surface feel without occlusion. It also acts as a chelating agent in cleansing systems, sequestering calcium and magnesium ions to enhance surfactant performance in hard water.
