Sodium acetate (CAS 127-09-3) is the sodium salt of acetic acid, supplied as a white powder under trade designations including Smitey, Safeway SD, and the E-number E262i. It is also referenced by the FEMA number 3024 and abbreviated as NA Acetate in formulation documentation.

In food manufacturing, sodium acetate functions as an acidity regulator by donating or accepting protons to maintain target pH ranges, extending shelf life in baked goods and snack coatings. In pharmaceutical and cosmetic formulations, it serves as a buffering agent in topical preparations and acts as a mild antimicrobial by lowering water activity at the product surface.
