Sodium caprylate (CAS 1984-06-1), also known as sodium octanoate, sodium octoate, and sodium n-octoate, is the sodium salt of caprylic acid. It carries no assigned E-code and is identified under EC 217-850-5 with the molecular formula C8H16O2.Na.
In pharmaceutical manufacturing, sodium caprylate stabilises albumin solutions by binding to protein sites and preventing denaturation during heat treatment.
