Description

Sodium citrate (CAS 68-04-2) is the trisodium salt of citric acid, commercially known under names such as Citreme, Citnatin, and Citrosodine, and approved as food additive E 331iii. It belongs to the Salts & Minerals category and carries FEMA designation 3026.

In food and beverage manufacturing, sodium citrate acts as a pH buffer and emulsifying salt, stabilising processed cheese textures by preventing fat separation during heating. In pharmaceutical formulations, it functions as a chelating agent, binding divalent metal ions that would otherwise catalyse oxidative degradation of active ingredients. Personal care formulators use it to regulate rinse-off product pH and condition skin.
