Description

Sodium diacetate (CAS 126-96-5) is the sodium salt of acetic acid in a 1:2 ratio, registered as E262ii under EU food additive legislation. It is also sold under trade names including Dykon and Meatshure 501, and is sometimes referred to as sodium acid acetate.

In food manufacturing, sodium diacetate acts as an antimicrobial preservative in processed meats and baked goods by releasing acetic acid at low pH, inhibiting mould and bacterial growth. It also functions as a pH buffer in sauces and marinades, and serves as a catalyst in select esterification reactions in chemical processing.

Sodium diacetate is available in food-grade and technical-grade forms, with food applications covered under E262ii and FCC specifications. It is subject to REACH registration for industrial supply within the EU. Standard packaging includes 25 kg bags, with bulk options available on request.
