Description

Sodium lauroyl lactylate (SLL) is an anionic surfactant derived from lauric acid and lactic acid, supplied as the sodium salt. It is commercially available under trade names including Imwitor 560, Pationic 138C, Capmul S 12L, and Stepan SLL-FB. No E-number is assigned for non-food applications, though food-grade designations apply in specific markets.

In bakery formulations, SLL strengthens gluten networks by interacting with starch and protein fractions, improving dough tolerance and crumb structure. In personal care emulsions, it stabilises oil-in-water systems and modifies rheology by forming lamellar structures at the interface, reducing the need for additional thickeners.
