Description

Sodium propionate (CAS 137-40-6) is the sodium salt of propionic acid, registered as food additive E281 and sold under trade names including Mycoban, Impedex, Bioban-S, and Deketon. It carries EC number 205-290-4 and molecular formula C3H6O2.Na.

In baked goods and dairy products, it inhibits mould and rope-forming bacteria by disrupting microbial cell metabolism at low concentrations, extending shelf life without affecting yeast activity. In pharmaceutical tablet manufacturing it functions as a pH buffer, and in personal care formulations it acts as a skin conditioner and mild preservative at controlled concentrations.
