Description
Sorbitan trioleate (CAS 26266-58-0) is a non-ionic sorbitan ester surfactant derived from sorbitol and oleic acid. It is commercially available under trade names including Span 85, Crill 5, and TE 33, and carries the E-number designation E496 within European food additive regulations.
In food and nutrition applications, sorbitan trioleate functions as a water-in-oil emulsifier, stabilising fat-continuous systems by reducing interfacial tension between immiscible phases.
