Description

Sorbitan tristearate (CAS 26658-19-5) is a non-ionic sorbitan ester surfactant derived from sorbitol and stearic acid. It is commercially available under trade names including Span 65, Arlacel 65, and Armotan TS. No E-number designation applies to this ingredient.

In food and confectionery manufacturing, sorbitan tristearate controls fat crystal polymorphism in chocolate coatings, slowing bloom formation by stabilising the beta-prime crystal structure. In personal care formulations, it functions as a water-in-oil emulsifier with an HLB of approximately 2.1, providing structured emulsion systems in creams and sticks. Polymer processors use it as an internal antistatic and dispersing agent.

Sorbitan tristearate is supplied as solid beads and is available in food-grade and technical-grade specifications.
