In food and pharmaceutical manufacturing, sucrose palmitate functions as an oil-in-water emulsifier by orienting its hydrophilic sucrose head and lipophilic palmitate tail at oil-water interfaces, stabilising emulsions and improving ingredient dispersion. In cosmetic formulations, it reduces surface tension to promote even spreading of active ingredients across skin.
