Tartrazine (CAS 1934-21-0) is a synthetic azo dye approved as a food colorant under the designation FD&C Yellow No. 5 in the United States and listed as INS 102 in international food standards. It is also referenced under the trade designations Y-4, AY 23, and CI 19140, and carries the EC number 217-699-5.

In food and beverage manufacturing, tartrazine imparts a stable lemon-yellow hue to products such as soft drinks, confectionery, and sauces by absorbing light in the blue-violet spectrum. In pharmaceutical tablet coating and personal care formulations, it provides consistent, reproducible colour at low concentrations without affecting product stability.

Tartrazine is supplied as a food-grade powder compliant with FCC and EU food additive specifications, as well as cosmetic and pharmaceutical grades meeting relevant purity thresholds.
