Valeric acid (CAS 109-52-4, EC 203-677-2, C5H10O2) is a straight-chain saturated fatty acid, also known as pentanoic acid or pentoic acid, and referenced under FEMA 3101 and NSC 406833. It carries no assigned E-code in the EU but is recognised in flavour and fragrance regulatory frameworks internationally.
In food and flavour applications, valeric acid contributes characteristic dairy and fermented notes at controlled concentrations, functioning as both a flavorant and acidulant. In personal care formulations it acts as a pH buffer and skin conditioning agent, while in chemical synthesis it serves as a catalyst precursor and intermediate for ester production.
