Betanin
Description
Betanin (CAS 7659-95-2), also known as beetroot red or E162, is a natural red-violet pigment extracted from red beetroot. It is used commercially as a plant-based colorant in food and beverage manufacturing.
Synthetic dye replacement and clean-label positioning drive demand for this ingredient. In dairy and plant-based products, including yogurts and ice creams, it delivers stable pink-to-red hues without synthetic additives.
Beverage formulators use it to color fruit drinks, smoothies, and functional beverages where natural sourcing is a label requirement. Confectionery and bakery applications include sugar coatings, frostings, and fillings.
A vivid red tone is achieved at low usage levels in these applications. Processed meat and meat-alternative producers also incorporate it to achieve or enhance red coloration in finished products.
The ingredient is supplied as a liquid concentrate, spray-dried powder, or paste, depending on the processing requirements of the end application. Standard grades include food-grade and FCC-compliant specifications.
Color strength is typically expressed as betanin content or absorbance units. Stability-optimized formulations with encapsulation or pH-buffering are available for applications requiring extended shelf life.
