Description
Sodium aluminum sulfate (CAS 10102-71-3), also known as sodium alum and listed as E521 in food applications, is a double salt used across food processing and water treatment.
It functions primarily as an acidulant, coagulant, and pH buffer depending on the application context. In food production, it acts as a leavening acid in baking powders and self-rising flours.
This chemical controls gas release timing for consistent texture in baked goods. Water treatment facilities use it as a coagulant and flocculant to aggregate suspended solids and clarify drinking water.
It is also effective for industrial effluent streams. In textile and leather processing, it serves as a mordant and fixing agent, improving dye uptake and bonding to various fiber substrates.
Pulp and paper manufacturers apply it for pH control and sizing retention, influencing paper surface quality and ink absorption. Sodium alum is supplied as a white crystalline powder or granules.
Food-grade material is available to E521 specifications and FCC standards, suitable for direct food contact applications. Technical-grade material is offered for industrial water treatment.
