Description

Isopropyl citrate (CAS 39413-05-3), approved as E384 in food applications, is a citric acid ester used commercially as a chelating agent, emulsifier, and antioxidant stabilizer.

It functions primarily by binding metal ions that would otherwise catalyze oxidative degradation in fats, oils, and formulated products. In edible oils, margarines, and fat-based food products, it extends shelf life.

By sequestering pro-oxidant metals such as iron and copper, it protects flavor and color integrity. Personal care formulators incorporate it into creams, lotions, and lipstick bases where it stabilizes oil phases.

It prevents rancidity in emulsified systems and is used in lubricant and metalworking fluid formulations. It acts as a chelant to control metal contamination that would otherwise accelerate fluid breakdown.
