Description

Propionic acid (CAS 79-09-4), also designated E280 in food additive legislation, is a short-chain carboxylic acid used commercially as a preservative, acidulant, and chemical intermediate. Its antimicrobial action against mold and certain bacteria makes it a primary active ingredient across food, feed, and industrial preservation applications. In baked goods and dairy products, it extends shelf life.

By inhibiting mold growth at low inclusion rates, it allows formulators to reduce or replace synthetic preservative blends. Grain and silage preservation is a major agricultural outlet for this versatile chemical. Propionic acid is applied directly to harvested crops to prevent spoilage during storage. Flavor and fragrance manufacturers use it as a building block for propionate ester synthesis including ethyl and isoamyl propionate.

These esters contribute fruity notes to food and beverage formulations. In chemical synthesis, it functions as a catalyst precursor and intermediate in the production of herbicides, pharmaceuticals, and plastics.
