Sodium dipropionate

Sodium dipropionate (CAS 63785-15-9), also known as sodium propionate, is the sodium salt of propionic acid used as an antimicrobial preservative and pH buffer across food, feed, and pharmaceutical manufacturing.

It inhibits mold and bacterial growth in finished products and during processing, extending shelf life without synthetic preservative blends. In baked goods, tortillas, and packaged bread, it controls mold and rope-forming bacteria.
