Sodium acetate (CAS 127-09-3), also designated E262i in food applications, is an inorganic acetate salt used across food, pharmaceutical, and personal care manufacturing. It functions primarily as a pH buffer, acidulant, and preservative in both aqueous formulations and dry processing systems.
