Description

Sodium lactate (CAS 72-17-3), also designated E325, is the sodium salt of lactic acid supplied primarily as an aqueous solution. It functions as a humectant, pH buffer, and antimicrobial synergist across food, pharmaceutical, and personal care manufacturing.

In processed meats and ready-to-eat foods, it extends shelf life by suppressing pathogen growth while contributing a mild, clean taste profile. Personal care formulators incorporate it into moisturizers, lotions, and scalp treatments.

In these cosmetic applications, it supports skin hydration by attracting and retaining moisture in the stratum corneum. Pharmaceutical manufacturers use it in parenteral fluid formulations and topical preparations requiring precise pH buffering.

In bakery and confectionery production, it controls water activity and improves texture stability throughout shelf life. Sodium lactate is commercially available as a liquid solution, most commonly at 60% concentration.

While 60% is standard, 50% and 80% grades are also traded. Food-grade material conforming to E325 specifications is the dominant commercial form, with USP and BP grades available for pharmaceutical applications.
