Sodium citrate dihydrate (CAS 6132-04-3), also known as trisodium citrate dihydrate, is the crystalline hydrated form of sodium citrate used across food, pharmaceutical, and industrial applications.

It functions primarily as a buffering agent, pH regulator, and sequestrant, stabilizing formulations by controlling acidity and binding metal ions that would otherwise degrade product quality.
