Description

Pullulan (CAS 9057-02-7), also designated E1204 in food applications, is a naturally fermented polysaccharide produced from starch by the fungus Aureobasidium pullulans. It functions as a film-former, binder, and moisture-retention agent across food, pharmaceutical, and personal care manufacturing.

In oral solid dosage manufacturing, pullulan is the primary material for producing thin, rapidly dissolving oral strips and hard capsule shells as a gelatin alternative. Food manufacturers use it to coat confectionery, nuts, and snack products.

This ingredient extends shelf life by forming an oxygen-barrier film that reduces oxidative degradation. In cosmetic formulations, it delivers a tightening, skin-smoothing film effect in serums and face masks, supporting texture and on-skin performance claims.
