Sorbitan monostearate (CAS 1338-41-6), commonly known as SMS or E491, is a non-ionic emulsifier derived from sorbitol and stearic acid. Arlacel 60 is a recognized trade name buyers will encounter across supplier and formulation documentation.
It functions primarily as an emulsifier and stabilizer across food, cosmetic, and industrial manufacturing processes. In food production, SMS is used to stabilize fat-based emulsions in baked goods and confectionery coatings.
