Description

Erythorbic acid (CAS 89-65-6), also known as Isovitamin C and listed as E315 in the EU, is a stereoisomer of ascorbic acid used commercially as an antioxidant and acidulant across food, cosmetic, and pharmaceutical manufacturing. Unlike ascorbic acid, it carries no vitamin C activity, making it a cost-effective choice where antioxidant function alone is required. In meat processing, it inhibits oxidative discoloration and extends shelf life in cured products.

It is commonly used in bacon, sausages, and deli meats, often alongside nitrites to accelerate color fixation. Beverage manufacturers incorporate it to prevent oxidative off-flavors in fruit juices, soft drinks, and beer. In personal care formulations, it stabilizes color-sensitive or oxidation-prone products including skin creams and hair dyes. Pharmaceutical manufacturers use it as an antioxidant excipient to protect active ingredients.
