Ammonium calcium alginate (CAS 9005-31-6), commercially known as Keltose, is a mixed salt of alginic acid combining ammonium and calcium cations. It functions as a gelling, thickening, and stabilizing agent across food, pharmaceutical, and industrial manufacturing processes.
